Our Brazilian Coffee is a single origin, Organic, Fair Trade, Brazilian Coffee.
Named after on of the great Brazilian Generals (Luís Alves de Lima e Silva, Duke of Caxias, Nicknamed "The Peacemaker"), this coffee is grown in Carmo de Minas, in Southern Brazil.
Zambia Estates is comprised of three main estates: Ngoli, Isanya, and Kateshi. This honey-processed coffee goes through careful cherry selection with double handpicking of the fullest red cherries ensuring a consistency of over 98% fully formed red ripe cherries that go into flotation prior to cherry skin removal. The muscilage covered parchment is then dried on raised African drying tables for between 21 and 30 days before being stored in conditioning bins in which the parchment settles for a minimum of 1 month.
